Thanks! Yes, I used organic coconut milk instead of the heavy cream and the butter. They are a bit more firm but aside from that I can't tell the difference. This week I have almond and blood orange flavors. They're not vegan, however.

Henry, the vegan truffles you had in the bookstore on Thursday were the BEST I've ever had - wow. For the vegan version do you just substitute coconut milk for both the cream and butter? The flavor and texture were genius!

Hey Stephanie,
I'm glad you like my chocolate creations. I will have more in the bookstore on Tuesday. This week I'm making 2 new flavors: organic peppermint and organic blood orange zest (and I left the zest in the truffle for texture and bursts of flavor.) I'm also using Valrhona's Guanaja 70% dark chocolate instead of last week's Valrhona Equatoriale 55%. Darker, more bitter and deeper flavor.

The recipe above is a good starting point but if you give 2 chefs the same exact recipe they will most likely still cook up different dishes.

Enjoy and let me know what you think of the new flavors.

Henry,

I just finished eating one of your truffles. I sense an addiction coming on, and am writing you to tell you to please please keep 'em coming. Don't stop making them. They are absolutely divine!!!! Is this the recipe for the same ones that you have in the bookstore? I can try to make them myself, but I'm sure that they just won't be the same. So, please will you make some more and replenish the tray in the bookstore? Thank you! :)
